Meal One: Curry Coconut Shrimp & Couscous with Green Beens, and Eggs

Meal Two: Honey Garlic Salmon with Couscous, Pepper, and Cucumber

Shrimp Dish: The couscous contains curry powder, salt, pepper, and olive oil. The green beans contain ghee (organic butter substitution). The shrimp was marinated in a sauce made out of honey, curry powder, and Coconut Aminos sauce (as pictured above). For the hard boiled egg I just added pink Himalayan salt and pepper.

Salmon Dish: The couscous contains curry powder, salt, pepper, and olive oil. For the salmon I baked it in 1 TBS of olive oil, 1 TBS of honey, and 2 1/2 chopped garlic cloves. I finished this meal off with half an orange pepper and half a sliced cucumber

Coconut Aminos sauce is amazing!! It is sweet and flavorful, yet healthy and raw! I use it for a lot of my recipes!

Meal Prep

Meal One: Maple Walnut Chicken and Roasted Lemon Pepper Broccoli with a side of Trail Mix or Mixed Fruit

Meal Two: Lemon Pepper Salmon on a bed of Brown Rice and Mixed Greens with a side of carrots

For the most part, these recipes are really easy to make!

I used a regular chicken breast, fresh broccoli, lemon juice, raw roasted walnuts, black pepper, and organic maple syrup for the chicken dish.

For the trail mix I just used raw almonds, organic dark chocolate chips (Lily’s are the best!), and organic raisins.

For the fruit salad I(my dad) mixed up some mangos, strawberries, raspberries, peaches, and oranges.

For the salmon dish: frozen atlantic salmon filets, fresh mixed greens, lemon pepper seasoning, olive oil, lemon extract/ lemon juice for rice, and 90 sec pouch of brown medley rice (Seeds of Change is a very healthy brand)

Daily Greens- Banana Smoothie

Looking for a nice thick, creamy, and sweet way to get your daily veggie intake? Well if you are a banana lover you are in luck! Scroll down for the recipe:)

Recipe:

  • 1 TBS of Chia seeds
  • 1 1/2 Frozen bananas
  • 1 Scoop of Amazing Grass powder
  • 6 oz of unsweetened, original almond milk

1.) Just blend all the ingredients in a mixer!

Food of the day! Chia Seeds!!

If you are familiar with chia seeds, you should know they are an extremely excellent source of omega-3 fatty acids, which help raise your HDL cholesterol (good cholesterol). This increase in cholesterol helps prevent heart attacks and stroke. They are also high in fiber and rich in antioxidants!

Interesting Fact: These seeds help thicken smoothies

Chocolate Covered Blueberries

  • 1/2 Cup of frozen blueberries
  • 1 Chocolate bar (Lilly’s Dark Chocolate)
  • 1 TBS Crushed Almonds

1.) Melt chocolate

2.) Pour chocolate over frozen blueberries on a flat surface (I placed mine on a cutting board)

3.) Add crushed almonds on top

4.) Store in freezer. Whala! 🙂

As I mentioned before blueberries are an amazing anti-aging natural remedy. They also are good for memory and coordination, making this snack not only delicious but beneficial!

Why buy anti-aging creams, when there are blueberries? Blueberries contain chemicals that act as antioxidants. These antioxidants protect the body against ”oxidative stress,” one of several biological processes that cause aging.

I am Dietitian in training. Currently, I am in school for my AA degree and will soon be heading off to get a master’s degree in dietetics.
